Sugar Shacks: Northern Ontario's Sweet Spring Ritual

The temperatures have been, err, rising, which means spring is near. One of spring's sweetest gifts is maple syrup, tapped from the sap of Maple trees which hug Northeastern Ontario's landscape.

Visit a sugar shack in Northeastern Ontario to taste maple syrup in its truest form, and every form in between; liquid, spread, candy, toffee, or frozen. While you're visiting, take a tour of the on-site sugar bush and learn about the tapping process.

Generally, sap begins to flow in mid-March and lasts for 4 to 6 weeks. The best time to visit is when daytime temperatures rise above freezing (32 degrees Fahrenheit / 0 Celsius), because the rising temperatures create pressure in the tree trunk, and the sap begins to flow.

Once the tapping has come to an end, the community of Powassan comes together to celebrate the season with the Annual Powassan Maple Syrup Festival - It's worth a visit!
